I have not visited this site for a while as I have been working on a project which has taken lot of my time. Something I have always wanted to do, but was waiting for the right time. I feel that my children are grown and independent, I can finally concentrate on myself. Now that I have started, I am determined to see it through.
To keep myself from being distracted I have taken to reading motivational books. Amongst many others, my favourite would be Tony Robbins ‘Unlimited Power’
Tony Robbins teachings have always inspired me. A few years ago I went to a couple of Tony Robbins seminars. The 5 day ‘Date With Destiny’ seminar was my favourite from all his life changing seminars. He made us laugh, cry, sing , dance, and experience walking on burning coal. So much of his teachings have been implemented over the years and I believe my world has improved, a little through my perception and more with my efforts.
To accomplish my goals and see them succeed, I have decided on creating a vision board. Slowly but surely all my dreams, goals, desires and wishes will be displayed in vibrant coloured images and writings. As the Law of Attraction states – ‘whatever you project energetically or put your energy towards whether that be positive or negative you will attract.’
Once my board is complete I will definitely share it with you all.

Spicy Savoury Oats
This is a very quick and healthy dish that I made for lunch today.
Ingredients
1 small broccoli
1 small carrot
1 Red Chilli
1 Red onion
1 spoonful of frozen sweetcorn
1 clove garlic – sliced
1/2 teaspoon ginger paste
A handful of fresh green coriander
1 cup ready porridge oats
1/4 teaspoon turmeric powder
salt and pepper to taste
(You can use any vegetable at hand. I used these because I had them in my fridge)
Method
Heat a little oil in a non stick pan and stir fry the chopped onions for a minute or so until the onions are transparent. Add the sliced garlic, ginger paste and cook some more. Now add the broccoli florets, grated carrots (I grated them so that they cook quickly), sweetcorn and chopped coriander. Let the vegetables cook for a couple of minutes. Stir in the turmeric powder, salt and pepper. Now add 2 and 1/2 cups of water and let the water come to a boil softening the vegetables.
Add 1 cup of porridge oats. Stir and let it cook for a couple of minutes on low to medium heat. When it is thickened to the preferred consistency, remove from heat and serve immediately.
Enjoy it with some French baguette or just on its own. This dish is nutritious, filling. Perfect for lunch.
