Chakri is a savoury snack mainly associated with Diwali time. It is made with rice flour mixed with spices and is crispy. Chakris require a special nozzle and can be stored in an air tight container for 3-4 weeks. It is not Diwali or any festive time It is nearly summer but who says that to enjoy certain foods we have to wait for a certain time? So thought I would make it and I am sure once it is made it will be all eaten and enjoyed within a week. So here I will share the recipe as I make it.
4 bowls Rice Flour
2 tbl sp Gram Flour
2 tbl sp Plain Flour
125g Butter (half packet)
2 tsp Salt
1 tsp Chilli Powder
1 tsp Turmeric Powder
1 tbl sp sesame seeds
2 tbl sp Lemon juice
2 tbl sp Sugar
1 tbl sp Finely chopped fresh coriander
1 tsp Ginger Chilli Paste
1 cup fresh curd
Method
Sieve all the flours together in a mixing bowl.
Add salt, chilli powder, turmeric powder, sesame seeds, lemon juice, sugar, very finely chopped fresh coriander and ginger chilli paste.
Make a well in the center and add the soft, almost melted butter
Rub the flour with all the ingredients and the butter to make it into a crumbly mixture
Make a stiff dough using the fresh curd and enough water
On a grease proof paper with a metal savoury maker using a star disc, fill it with the dough and make spiral shapes by turning the handle. I am sure we could make them with a cake icing set using a small star shaped nozzle. I have never tried but its worth a try if the metal nozzle not available (but having the dough softer).
They can be stored for 3-4 weeks, mine never lasts that long.
